Fujitora is a Japanese brand of kitchen knives, also known as Tojiro. Tojiro is a manufacturer of kitchen knives located in Niigata, Japan. The quality of Tojiro's kitchen knives is recognized both in Japan and abroad.

The DP cobalt alloy steel interrupted A-1 series is a series of interrupted kitchen knives for home use, with the same sharpness as those for professionals. The knives in this series have an interrupted structure in which stainless steel is split and encased in steel. The DP cobalt alloy steel used here is proprietary and  it is a revolutionary composite material made of high-purity iron ore, from which impurities have been removed, sandwiched by 13 chrome stainless steel.

The blade of this knife series is hard and its sharpness is sharper than that of ordinary commercial knives. The attachment of the blade is done by hand by craftsmen.

The handle is made of laminated tempered wood used for professional use, which is much more durable and water-resistant than natural wood. Therefore, it can be used for a long period of time.
